- 8 Spring OnionsCut Into 2cm diagonal
- 1 Red Bell PepperDeseeded Cut Into Thin Strips
- 1/2 CucumberShredded into Matchsticks

Mix the soy sauce, sweet chilli sauce, lime juice, fish sauce and sweetener in a bowl and set aside.
Meanwhile, place the rice noodles in a bowl of boiling hot water and leave to soak for 7-8 minutes. Drain well and put the drained noodles onto a serving dish.
Add the vegetables and the beef strips and pour over the soy dressing. Toss to mix well and serve immediately or at room temperature.
