- 4 Chicken Breast
- 2 Cloves Crushed Garlic
- 2 cm Root Ginger
- 6 Spring OnionsFinely Chopped
- 2 tbsp MintFinely Chopped

- 1 Red Chilliesdeseeded and chopped

Directions

Steps
1 Done | Place the chicken, ginger, garlic, coriander, spring onions, lemongrass, mint, lime zest, lime juice, and red chilli into food processor and season well. |
2 Done | Blitz until the chicken is finely ground and everything is well mixed. |
3 Done | Divide the mixture into 12 portions and using your hands shape into small cakes. |
4 Done | Using a large non-stick frying pan spray with the low calorie cooking spray, fry the cakes off over a medium heat 3-4 minutes turning once. |
5 Done | Transfer to a non-stick baking tray place in the pre-heated oven for 7 or 8 minutes. |
6 Done | Make the salad by peeling the cucumber and carrots into thin ribbons, using a vegetable peeler or mandolin, and place in with the sliced red onion and lemon juice, season and place to the side. |
7 Done | Remove the cakes from the oven and serve immediately with the cucumber salad. |
