Tantalise your taste buds with these Syn Free Slimming World Inspired Thai style chicken cakes. Freezer friendly.
Place the chicken, ginger, garlic, coriander, spring onions, lemongrass, mint, lime zest, lime juice, and red chilli into food processor and season well.
Blitz until the chicken is finely ground and everything is well mixed.
Divide the mixture into 12 portions and using your hands shape into small cakes.
Using a large non-stick frying pan spray with the low calorie cooking spray, fry the cakes off over a medium heat 3-4 minutes turning once.
Transfer to a non-stick baking tray place in the pre-heated oven for 7 or 8 minutes.
Make the salad by peeling the cucumber and carrots into thin ribbons, using a vegetable peeler or mandolin, and place in with the sliced red onion and lemon juice, season and place to the side.
Remove the cakes from the oven and serve immediately with the cucumber salad.
