- 4 Pointed Red Pepper
- 1 Chopped Onion
- 1 Herb Infusion Stock
- 800ml Water
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- Garnish Coriander
I’m often looking for a soup that will boost my weight loss, I conjured up this lovely little Pointed Red Pepper Soup which is Syn Free and contains more speed free food than your average soup.
WOW it doesn’t dissapoint, smooth & packed full of flavour, great for a light lunch, a starter, or just a little snack between meals to fill you up and slim you down!
Why not pop it into a flask and have it on the go? What a treat!
Place peppers and onion onto a non stick roasting tray, place into the oven for approximately 30 minutes or until pepper are roasted with a little charring! Meanwhile
Place 800ml of water into a saucepan and dissolve the stock add the salt and pepper. Leave to cool down.
When the peppers and onion are sufficiently roasted really to your taste, pop the peppers and onion into the stock, blitz in a blender for a minute.
Serve into bowls garnish with a sprig of coriander, perfect.
