Syn Free Roasted Vegetable Crustless Quiche | Slimming World Inspired Quiche

So my life had been completely void of slimming world quiches until about 2 months ago, and wow I have been missing a tasty filling trick!

One of the nicest quiches that I have made is this roasted veg, its super speedy great for filling you up on those SP days and any other. I now keep a quiche in the fridge at all time for snacking, great hot or cold.

If you like me have very little time, why not pop the veg in to roast while cooking another meal, after all time is sparse at the best of times.

I love to keep a variety of low calorie sprays in my kitchen cupboard and now with such a wide range available the possibilities are limitless. For this Crustless Slimming Quiche I would use a mixture of the rapeseed or sunflower variety.

A note to the wise!
When using a low calorie spray you will soon find that a lower heat is best on your pan, otherwise the to have a tendency to burn. Alternatively with a lot of recipes that require oil or a low cal spray you could try a simple drop of water, it save the pan issue as well as keeping the oils & fats at bay.

Chop all vegtables, place on a lined oven tray, spray with Fry-light and roast for 30 mins at 180 fan, turning occasionally.

Mix the cottage cheese and eggs and pour into a flan dish.

Place the roasted vegetables on top of the mixture, pushing and many into the mixture as possible.

Place in the oven for 30-40 minutes on 180 fan
