I love to keep a variety of low calorie sprays in my kitchen cupboard and now with such a wide range available the possibilities are limitless. For this potato bhaji tortilla I would use a mixture of the garlic infused and rapeseed.
A note to the wise!
When using a low calorie spray you will soon find that a lower heat is best on your pan, otherwise the to have a tendency to burn. Alternatively with a lot of recipes that require oil or a low cal spray you could try a simple drop of water, it save the pan issue as well as keeping the oils & fats at bay.

Parboil the potatoes, until just tender. Drain and set aside.
Pre-heat oven to 180 fan / 160 gas 4
Over a medium heat spray a lidded frying pan with low calorie spray (frylight or alternative) add the onions and a dash of water, cover and cook until the onions are soft.
Once the onions are soft, uncover and allow any liquid to reduce and the onions to turn golden. Stir in the chillies, garlic, ginger and beans and cook for 3 minutes. Add the turmeric, garam masala and mix through until the spices cook through and the aromas develop.
In a separate bowl break the eggs and mix with the coriander and season.
Add the potatoes to the onion mixture and combine well. If your frying pan is oven safe you can add the eggs now, alternatively using a loose bottom flan dish spread the potato mixture evenly and cover with the egg mixture.
Place into the oven for 30 minutes or until the eggs have cooked through and the top is golden.
Allow to cool for 5-10 minutes and turn out.
