Ingredients
- 80g Yellow Split Peas
- 2 Large Chopped Onion
- 3 Cloves Crushed Garlic
- 1.2ltrs Vegetable Stock
- 2 Handfuls MintRoughly Chopped
- Salt
- Black Pepper
- 700g Frozen Peas

This Syn Free Slimming World inspired Pea & Mint Soup is just perfect any time of the year and one of my personal favourites. I just love the rich taste and smooth consistency and what a great source of fibre!
The frozen peas have a great sweetness to them, which adds a filling free food to this wonderful Slimming World inspired soup. So when looking for those healthy alternatives, cutting out cream and oil, this soup is a great way to stay fuelled up for the rest of the day.
Steps
1 Done 40 mins | In a saucepan use 800ml of the water and bring the split peas to the boil, simmer for approximately 30-40 mins until the split peas have softened. You will have a little residue on the top which you should skim off. |
2 Done 5 mins | Spray some low calorie cooking spray in a pan and fry off the onions until soft, add a splash of water so you don't end up with a sticky situation. Pop in the garlic to cook for a further 2 minutes. |
3 Done 5 mins | Drain your split peas and combine them with the onion and garlic. Crumble up the stock cubes and add them in, pour over the remainder of the water. Bring to the boil and proceed to simmer for Approximately 5 minutes. |
4 Done 5 mins | Keep just a few frozen peas back for garnish! Add the rest of the peas in, also add the majority of the chopped mint just hold a little back for the garnish. Season with salt and pepper and simmer for 5 minutes. |
5 Done 3 mins | Then blend, you are aiming for a thick creamy soup, if by any chance it is to runny, pop it back on the stove to simmer and reduce down a little. |
6 Done | Ladle the soup into bowls, garish with a few peas and a couple of mint leaves. |
