- 700g 5% Mince Beef
- 2 Chopped Onion
- 400g CarrotsPeeled and Roughly Chopped
- 225g Runner BeansCut into Lengths
- 700g PotatoesMaris Piper Peeled and Thickly Sliced
- 1.2L Beef StockHot
- 4 tbsp Tomato Puree
- 800g Baked Beans
- A Dash Tabasco Sauce
- To Taste Salt & Pepper
- To Garnish Flat Leaf Parsley
Late nights camping by the fire, this wonderful one pot is just what you need, tasty for all the family.
Use a large non-stick pan and spray with low calories cooking spray, Stir the mince for 5-8 minutes until browned off.
Add in the onions, carrots, runner beans, and potatoes and give it a little stir. Then add in the stock and tomato puree. Bring it to the boil. Cover and simmer for approximately 30 minutes or until the vegetables are tender.
Stir in the baked beans and tabasco sauce and heat through, season and serve.
