- 1 Chopped Onion
- 2 Tbsp Madras Curry Powder
- 1 Tsp Cinnamon
- 8 Chicken ThighSkin & Visible Fat Removed - Chopped into Bite Size Pieces
- 400g Chopped Tomatoes
- 200ml Chicken Stock
- To Taste Salt & Pepper
- 8 Tbsp Fat Free Natural Yogurt
- 280g Basmati RiceTo Serve

This syn free Chicken Spinach and Tomato Curry is super quick ideal if you’re running late, working late or just busy and need feeding in a hurry. This will satisfy the whole family in super quick time a super healthy dinner replacing that takeaway.

Steps
1 Done | Spray a deep non-stick frying pan with low calorie cooking spray and place over a high heat. |
2 Done | Add the onion and stir-fry for 2-3 minutes, then stir in the curry powder and ground cinnamon and stir-fry for 1 minute. |
3 Done | Add the chicken pieces and the tomatoes, stock and spinach, cover and cook for 15-20 minutes or until cooked through. Season and remove from the heat. |
4 Done | Stir in the yogurt, garnish with the chopped coriander and serve with boiled white rice. |
