Place the onion and garlic, rice, butternut squash and stock into the slow cooker, add the seasoning and cook on low for two hours.

Uncover and at this point stir in the pesto, Courgette and red pepper. Cover and cook for a further 1 hour. Then all that is left is to serve and enjoy.
