Peel & diced the potatoes, place them on a pan of slightly salted boiling water. Bring back to boil and reduce heat to a gentle simmer for 15-20 minutes or until tender. Drain well and mash until smooth, set aside to cool.

Meanwhile line a baking tray with baking parchment/paper. Pre-heat oven to 180Fan 160/Gas 4.

Once the potatoes have cooled (to speed up the cooling spread the mashed potato on a flat tray and mix to allow the heat to escape). In a bowl add the potatoes, crab meat, prawns, lemon zest, coriander, paprika and one egg. Season and mix well using your fingers.

Form 12 equal sized balls from the mixture and place on the baking tray, using a spoon or your palm apply pressure to the balls, flattening them into cakes, about 2cm thick.

In a small bowl whisk the remaining egg and brush over each cake. Place in the oven and bake for 20-25 minutes. Turning half way. Until golden.

Meanwhile prepare your side salad with lots of lovely speedy vegetables. In a small bowl place the quark, paprika, tomato puree and mix well, add water until a smooth consistency.

Serve the fish cakes hot with side salad, sauce and a lovely wedge of lemon.
