Ingredients
- 500g 5% Mince Beef
- 2 Chopped Onion
- 2 Garlic ClovesMinced
- 2 CarrotsFinely Diced
- 2 CeleryFinely Diced
- 1 tsp Mild Chilli PowderOr as hot as you dare
- 2 tsp Ground Cumin
- 2 Beef Stock Cube
- 500ml Passata
- 400g Chopped Tomatoes
- To taste Black Pepper
- 400g Red Kidney Beans
- 200g Sweetcorn

This simple Chilli Con-Carne is a favorite syn free World Inspired meal in our household, and it’s a great one for getting all of that lovely speed food packed in. Ideal for batch cooking and freezable this is perfect for getting ahead so you can have a night off once in a while.

Steps
1 Done | Peel and finely chop the onions, garlic, carrots and celery (and any other Speed Veg you want to add). Roughly chop and set a side. |
2 Done | In a large pan brown off minced beef, draining any excess juices or fat. |
3 Done | To the browned mince, add the chopped veg, chilli powder, cumin, cinnamon and a good pinch of sea salt and black pepper, then cook for 7 minutes, or until softened, stirring regularly. Add the Oxo cubes towards the end. |
4 Done | Drain and add kidney beans (you could also add chickpeas here to bulk out your dish), tip in the tomatoes, breaking them up with the back of a spoon, then pour in the passata. Add the minced beef, breaking any larger chunks. |
5 Done | Bring to the boil, then reduce the heat to low and simmer with a lid slightly ajar for 1 hour, or until slightly thickened and reduced, stirring occasionally. |
6 Done | Serve up with fluffy rice or couscous, cauliflower rice, or over a jacket potato, with some yoghurt, and wedges of lime on the side for squeezing over. Sprinkle over some fresh chilli, if you like, then tuck in. |
