Indulge Top Tip
Why not make this meal that bit more tasty by making our super simple Low Syn Garlic Bread.
Peel and finely chop the onions, garlic, carrots and celery (and any other Speed Veg you want to add). Roughly chop and set a side.
In a large pan brown off minced beef, draining any excess juices or fat.
To the browned mince, add the chopped veg, chilli powder, cumin, cinnamon and a good pinch of sea salt and black pepper, then cook for 7 minutes, or until softened, stirring regularly. Add the Oxo cubes towards the end.
Drain and add kidney beans (you could also add chickpeas here to bulk out your dish), tip in the tomatoes, breaking them up with the back of a spoon, then pour in the passata. Add the minced beef, breaking any larger chunks.
Bring to the boil, then reduce the heat to low and simmer with a lid slightly ajar for 1 hour, or until slightly thickened and reduced, stirring occasionally.
Serve up with fluffy rice or couscous, cauliflower rice, or over a jacket potato, with some yoghurt, and wedges of lime on the side for squeezing over. Sprinkle over some fresh chilli, if you like, then tuck in.
