Steps
1 Done | Top and tail your gooseberries and place them onto a baking tray, sprinkle with 1 tbsp of sweetener. Bake for 10 minutes, give the a little stir and add 1 tbsp of sweetener.Bake for a further 10 minutes. |
2 Done | Meanwhile Mix 1 tbsp of sweetener with your 0% Greek Yogurt and set to one side. |
3 Done | When the Gooseberries are cooked remove from the oven. Drain off excess fluid. Leave to cool a little before blending 1/4 of the Gooseberries. |
4 Done | When Gooseberries are cool mix in the majority into the yogurt pop into your serving bowls. top each bowl off with a spoon of pureed gooseberry and top with a couple of leaves of mint leave to chill in the fridge before serving. |
