Tantalising good Potato Bhaji Tortilla

The perfect marriage of a Spanish tortilla and onion bhaji, this potato bhaji tortilla is so tasty hot or cold perfect for snacks, lunch and even picnics. This vegetarian delight is filling, flavoursome and a real crowd pleaser.

We have been enjoying this slimming favourite for several years, a great quick dish if unexpected guests arrive. My kids love this alone with all their friends too!

Key Kitchen Utensils & Equipment for this potato bhaji tortilla.

VonShef Pan
Vonshef Lidded Pan
A cracking buy at just £18 (with next day delivery through Amazon prime), this pan as become an integral part of most meals, replacing most others I use, it’s large enough to cope with our hungry family of 4 and the non-stick coating is holding up great. Works fab on the induction hob, so I’m sure would be just as good on all hob types.

Flan DishLoose bottom flan dish

I’ve always had two types of flan dishes the tradition dish and the loose bottom dish, both are great for this potato bhaji tortilla, if you haven’t already got one click on either image and you can purchase from amazon, both £10 or under with next day prim delivery.

Frylight Options
I love to keep a variety of low calorie sprays in my kitchen cupboard and now with such a wide range available the possibilities are limitless. For this potato bhaji tortilla I would use a mixture of the garlic infused and rapeseed.
A note to the wise!
When using a low calorie spray you will soon find that a lower heat is best on your pan, otherwise the to have a tendency to burn. Alternatively with a lot of recipes that require oil or a low cal spray you could try a simple drop of water, it save the pan issue as well as keeping the oils & fats at bay.

Steps

1
Done

Parboil the potatoes, until just tender. Drain and set aside.

2
Done

Pre-heat oven to 180 fan / 160 gas 4

3
Done

Over a medium heat spray a lidded frying pan with low calorie spray (frylight or alternative) add the onions and a dash of water, cover and cook until the onions are soft.

4
Done

Once the onions are soft, uncover and allow any liquid to reduce and the onions to turn golden. Stir in the chillies, garlic, ginger and beans and cook for 3 minutes. Add the turmeric, garam masala and mix through until the spices cook through and the aromas develop.

5
Done

In a separate bowl break the eggs and mix with the coriander and season.

6
Done

Add the potatoes to the onion mixture and combine well. If your frying pan is oven safe you can add the eggs now, alternatively using a loose bottom flan dish spread the potato mixture evenly and cover with the egg mixture.

7
Done

Place into the oven for 30 minutes or until the eggs have cooked through and the top is golden.

8
Done

Allow to cool for 5-10 minutes and turn out.
