Get yourself a large mixing bowl and pop in the dried fruit, carrots, apples, orange & lemon zest not forgetting the spiced Rum! give it a mix round and cover it with tin fiol or cling film to soak over night.

When you are ready to make your pudding, stir sweetener, milk eggs and vanilla together, then add the sarsons browning and melted margarine combine together. Put the dried fruit into this mixture and stir a little untill its all covered. Into this mixture stir in the breadcrumbs.

Over the pudding mixture you have already started to prepare get your flour and baking powder and a pinch of salt, sift it in getting as much air in as you can.

Get your pudding bowl, preferably a 1.25-ltr one and spray with low calorie cooking spray pop in your mixture. Cover the bowl with ruffled grease proof paper secure with kitchen string also cover again with tin foil whitch has been pleated and seal off with kitchen string.

Pop onto the top of this an upturn saucer, and place into a large saucepan. Pour into the saucepan a few inches of water and bring to the boil. Cover with a lid and steam for 4 hours on a low light, keep an eye on the water level and add boiling water from the kettle as necessary.

When cooked turn out onto a warmed plate and add the berries dust with icing sugar serve with fat free greek yogurt and just enjoy!
