Mix together half of the tumeric and half of the curry powder and all the salt together. Coat the chicken breasts with the mixed seasoning.
lightly spray your casserole dish with you low cal cooking spray. Pop it onto a high heat ( don't leave it sitting on the heat longas i find the spray burn quite easily) pop in your chichen and brown off.
Once brown just remove the chicken and set to one side. Add garlic and ginger with the chopped onion into the dish brown for about ten minutes. Add in the remaining of your spices.
Mix in the chicken stock and courgette and also the tomatoes at this point. Bring to the boil.
Turn down the heat, place the chicken breasts into the pan. cover with a lid and simmer for approximately 30 minutes until your chicken is succulent and tender.
Take the chichen out of the dish and place to one side keeping it warm, take the dish off the heat.
Add in half of the lemon zest, lemon juice and couscous into the onion sauce top up with enough water to just cover the top of the couscous if needed. Give it a stir and then stand for ten minutes until the couscous has cooked through.
Mix half of the coriander through the couscous serve and place chicken on the top sprinkle with the remaining coriander and lemon juice. Enjoy
