Put the stock into a saucepan and bring to the boil. Leave to simmer on a low heat.

Spray a non-stick frying pan with the low calorie cooking spray, and place on the heat, fry off the onions until they are staring to colour up. ( Add a little water if needed to stop them from sticking and burning)

Add the mushrooms into the onions cook for ten minutes, until all excess liquid has evaporated off. Add the rice. Stir in a little of the stock stir and slowly add the remaining stock.

Cook until all the fluid has been absorbed. Stir frequently, until the rice is creamy.

Serve in bowls grated on a little parmesan which is part of your HA allowance, add side salad to bulk up that extra speed!

Pop on a tiny sprig of marjoram to garnish.
