Cook your pasta as per instructions on the packet.
Pre heat your ove to 180C for fan
Pop your chopped courgette and pointed red pepper, onions into a Baking tray with the garlic give them a little toss and place in the heated oven and roast for approximately 30 minutes. Giving them the occasional toss stopping them from burning if you need to add a little water do so.
Whilst they are roasting in th oven you can get on with your meatball mix. Place the low fat pork mince into a mixing bowl with the thyme and seasoning ( pepper & salt). Shape into approximetly 24 meatballs and place in the fridge to chill whill the vegetables are roasting away.
Carefully blitz the raosted vegetables with the canned tomatoes puree and sweetener, the sweetener just takes off the sharpness from the tomatoes. also add 142ml of water.
Pour the sauce back into the roasting dish and place the meatballs into the sauce. Pop back in the oven for 20 mins to cook off.
