Ingredients
- 2 Banana Weetabix7.5 syns or HEB
- 1 Large eggs
- 1 Egg Whites
- 1tsp 0% Cal Sweetener
- 12 Blueberries
- 120g Fat Free Greek Yogurt
Directions
Even since the start of my slimming world journey I’ve loved experimenting with healthy extra choices especially healthy extra ‘b’s or as some have abbreviated to HEB’s.
Turning a seemingly stingy 40g of porridge oats or 2 Weetabix into a big enough meal to fill you up while helping to slim you down has been the saving grace to many a food optimising day for me.
The key to getting these light and fluffy is the the whisked egg white. While this take a little more effort that the all in method it’s well worth it!
The tray, I brought an array of silicone trays and amongst these was the mini muffins silicone moulds.
I don’t know but I always enjoy my food on a miniature scale and these mini moulds are just fab! With just a spray of frylight and they are perfect, not even a need for paper cases.
Steps
1 Done | Whip the egg whites to soft peaks and set a side. |
2 Done | Mix the Porridge Oats, Whole Egg, Sweetener & Half the yogurt together, blitz till smooth. |
3 Done | Carefully fold through the egg whites. |
4 Done | Lightly spray 12 of the moulds with fry light and divide the mixture evenly. |
5 Done | Push one blueberry into the centre of each. |
6 Done | Place the silicone mould on to a flat tray and place into a pre heated oven at 160 fan for 15-18 mins. |
7 Done | Finish with a splash of muller banana & custard yogurt and a good helping of blueberries. |
