- 6 Large eggs
- 75g Caster Sugar
- 75g Self Raising Flour
- 1/2 tsp Vanilla Essence
- 4 Egg Yolk
- 2 Juice & Zest Lemon
- 8 leaves GelatineSoftened In Cold Water
- 4 tbsp 0% Cal Sweetener
- 350g Fat Free Fromage Frais
- 2 Egg Whites
- 6 Strawberries
This Low Syn Lemon Chiffon Roulade is a beautiful light dessert with a clean lemon flavour.
A centrepiece for any gathering, wow your crowds with its stunning appearance. At just 2.5 syns per serving this will keep you on plan and racing towards your dream weight loss without feeling deprived.
Whisk the caster sugar and eggs until thick, so it increases 4 times in volume. (this will take 25-20) Minutes with and electric whisk.
Fold in the sieved flour and mix well.
Line a 30x 40 inch swiss roll tin with parchment paper.
Pour mixture into the tin spreading it evenly and bake for approximately 12 minutes. 180C/ Fan 160 C/ Gas 5
Whilst still warm turn out cooked sponge onto parchment paper which had a damp tea towel underneath .
Gently roll the sponge into a neat roll and set aside to cool.
Mix the egg yolks, lemon zest and juice in a bowl and microwave for 2 minutes mix well and microwave again for 2 minutes.
Squeeze out any water from the gelatine and stir into the lemon mixture. Add sweetener and leave to cool.
Whisk the egg whites until fluffy.
Mix the fromage frais into the cooled lemon mix.
Fold in the egg whites, place to one side until thick enough to spread on to sponge.
Carefully unroll the sponge and spread the lemon mixture evenly.
Re-roll the sponge, wrapping it in cling film.
Leave to set for four hours or until set.
To serve add strawberries or raspberries.
