Steps
1 Done | Pre-heat grill to medium/high. Trim and remove mushroom stalks and finely chop them. (the stalks!) |
2 Done | Spray a non-stick frying pan with low calorie spray. Add the chopped mushroom stalks, spring onions and one crushed garlic clove and stir fry over a high heat for 6-8 minutes. |
3 Done | Season well and transfer to a bowl with the remaining garlic cloves, the cottage cheese, lemon zest and chopped herbs. |
4 Done | Place the mushroom caps, gill side up, on a grill rack in a single layer and season well. Divide the stuffing among the caps and sprinkle with the parmesan. Place the grill rack about 12cm from the grill source and cook for 6-8 minutes or until the tops are golden and bubbling. |
5 Done | Divide the spinach leaves between four plates, top each with two stuffed mushrooms and serve garnished with pink peppercorns and chives. |
