- 5 Scan Bran5.5 syns
- 100g Wholemeal Plain Flour16 syns
- 3 tbsp 0% Cal Sweetener1.5 syns
- 1 tsp Baking Powder0.5 syns
- 1 tsp Cinnamon
- 0.5 tsp Bicarbonate of Soda
- 40g Porridge Oats7 syns
- 2 Large eggs
- 300ml Buttermilk9 syns
- 100g Dates14 syns (dried - chopped)
Directions
These Low Syn (4.5 per muffin) Bran Muffins are amazing any time of the day, great for breakfast, or as a healthy low syn snack. Serious comfort food, which can be just what you need when.
Steps
1 Done | Place the scan bran in the blender and blitz, tip into mixing bowl. Add the flour, sweetener, baking powder, cinnamon, bicarbonate of soda, and 30g of porridge oats, mix well. |
2 Done | Break egg into a jug, add the buttermilk and whisk together. |
3 Done | Pour mixture into middle of the dry ingredients and add the dates. Stirring together. When combined divided between the cases, sprinkle the rest of the oats and bake for 18-20 minutes. |
4 Done | (optional) Dust with icing sugar to serve. |
