This Low Syn Beef Stew & Dumplings is a delicious Slimming World recipe that is heart warming and perfect for those cold winter days. One of those meals we at times avoid, thinking we can’t have them too fattening! doesn’t have to be so. Beef Stew & Dumplings evoke so many childhood memories of time spent with family and all tucking into a comforting winter warmer, as a child dumplings are definitely my favourite winter food.
To be honest if you want to drop the dumplings you can really lower the Syn value. But for only 4.5 Syns I think that they are well spent. Possibly stopping those cravings because for once you have actually allowed yourself one of those (naughty) foods.
Serve with a good helping of your favourite veg to speed up your weight loss even more!

I love to keep a variety of low calorie sprays in my kitchen cupboard and now with such a wide range available the possibilities are limitless. For this Slimming World Beef Stew & Dumplings I would use a mixture of the garlic infused and rapeseed.
A note to the wise!
When using a low calorie spray you will soon find that a lower heat is best on your pan, otherwise the to have a tendency to burn. Alternatively with a lot of recipes that require oil or a low cal spray you could try a simple drop of water, it save the pan issue as well as keeping the oils & fats at bay.

Spray a large non stick pan with the low calorie cooking spray, brown off the beef. Place in the slow cooker.
Add garlic, onion, just brown off then add the stock, tomato puree, Worcestershire sauce and bay leaves. Bring these items to the boil then simmer for about 10 minutes. Season with black pepper corn and pour the ingredients over the beef. cover and cook for at least 7 hours.
After 7 hours turn the heat up to full, stir in the carrots, swede, and thyme.
Mix together the flour and the suet, parsley and a little salt and pepper. Stir in 3 tbsp. water and mix well to form a dough. divide into 6-8 pieces roll into little balls. Pop them onto the top of the stew, cover the cook pot and continue to cook for another 1.5 hours.
Sprinkle over the top your chopped parsley and serve as you always should add extra speed on your plate, cabbage or kale go really well. If you want to do this dish in the oven you can just pop it into a casserole dish cook for 2.5 hours pop dumplings on the top and cook for a further 25 minutes. Enjoy :)
