Well this was a success! Loved by all, this Low Syn Banana Weetabix Cake a sweet tempting and shows you that slimming can be super tasty.
The slimming world Weetabix cake recipe has been around for quite some time, however this is my version. The addition of bananas make for a sweet caramelised banana topping. Serve with greek yogurt and fresh berries.

Pre-heat oven to 160 fan and line a 9" round baking tin.
Crumble the Weetabix into a bowl and add the milk, leave to soak for 2 minutes.
Meanwhile beat the 2 whole eggs, add to bowl with yogurt, mixed spice, flour, sultanas, vanilla essence and sweetener combine.
Whisk the egg white till firm, fold in gently until combined. Place in tin, slice banana and place on top.
Mix 1 tsp of sweetener with 1/4 tsp cinnamon and sprinkle on top.
Bake for 40-45 mins until baked.
