- 2kg Gammon
- 2 halved Onion

My all time favourite Honey and Mustard Glazed Gammon
Christmas for me always starts with the aromas of warm ham, slowly baking in the oven, Christmas songs on the radio and a cheeky vino in one hand!
This honey and mustard glazed gammon is simply crowd pleasing, yet still super simple. I like to get a pretty large joint as it will last over the Christmas period, but just make sure it’s a suitable size for your roasting dish or casserole dish.
Gammon cooking time: Simmer 20 minutes per 500g/1lb 2oz
If the gammon is to be served cold, remove the joint from the fridge and allow to come to room temperature for 30 minutes.
I always use a casserole dish, I love the solid heavy weight of the pan, they can be a little expensive but are a investment, definitely not a dish that will ever need replacing.
I brought mine a good few years ago now and being a heavy cast iron pan it perfect on any hob type, I’ve used mine on both my old gas hob and my new induction hob (just be careful not to drop it, it is heavy!) I’ve been there so many years with a 7-10lb gain over the two weeks of Christmas but low and behold last year with a fully food optimised Christmas only 0.5lb on. So I definitely didn’t go without and make fabulously slimming choices throughout.
Going into the festive season with a bumper load of slimming recipes including this simple honey and mustard glazed Gammon and a mind set of flexibility you too can enjoy all Christmas has to offer and not set your slimming targets back.
Place the gammon joint into a large lidded casserole dish, the onions, carrots, celery, bay and peppercorns add cover with cold water, and bring to the boil. Reduce the heat, cover with a lid and simmer the gammon and vegetables gently for 20 minutes per 500g/1lb 2oz.
(If your pan is not quite large enough to cover the joint completely, turn the gammon over halfway through the cooking time.)
Remove the gammon from the water and set aside to cool for 15 minutes.
Use a small knife to remove the rind from the gammon joint, removing/leaving (okay so you can decide to leave the fat on for guests removing it later for yourself, or remove it all here, I'll leave that to you) as much of the fat as possible. Score the fat/or top in a diamond pattern.
Mix the honey and mustard together and brush half of it evenly over the gammon, including one side of the joint. Roast in the centre of the oven for 10 minutes, then reglaze with the remaining mixture. Return the gammon to the oven for a further 10– 15 minutes, rotate if browning more towards the back of the oven.
The gammon is ready when the fat/glaze on top is glossy and golden brown. Cover loosely with foil if the top begins to look too brown. Remove the gammon from the oven and set aside to rest for 15 minutes before carving.
Delicious hot or cold, a true Christmas treat!
