I love to keep a variety of low calorie sprays in my kitchen cupboard and now with such a wide range available the possibilities are limitless. For this Diet Coke Chicken Recipe I would use a mixture of the garlic infused and rapeseed.

When using a low calorie spray you will soon find that a lower heat is best on your pan, otherwise the to have a tendency to burn. Spray a non-stick pan with low calorie spray, over a high heat. Add the chicken, onions and peppers until lightly browned. Set aside.


Spray the pan with low calorie spray, add the garlic and spices stir fry for 1 min. Add the tomato puree, soy sauce, Worcestershire sauce, passata, Diet Coke and stock, bring to the boil and simmer for 12-15 minutes. Add the broccoli and continue to reduce the sauce.


When the sauce starts to thicken return the chicken, onions and peppers with the remaining broccoli.


Cook for a further 10-15 minutes until the sauce is reduced and coats the back of your spoon.


Serve with rice and extra speedy vegetables
