2 Garlic Cloves Peeled and Crushed
Juice Only Lemon
Flakes Red Chillies
1 tsp Thyme Fresh Leaves
1/2 tsp Marjoram Fresh Leaves
1 Medium Courgette Sliced & Diced
1 Red Bell Pepper Deseeded & Chopped

250g Cherry Tomatoes

Squashes are becoming popular more than ever. Making them relatively cheap, so when count the pennies these squashes help make that budget go that much further also they make such tasty dishes!

Fry light Options
I love to keep a variety of low-calorie sprays in my kitchen cupboard and now with such a wide range available the possibilities are limitless. For this Beef & Mushroom Stroganoff I would use a mixture of the garlic infused and rapeseed.
A note to the wise!
When using a low calorie spray you will soon find that a lower heat is best on your pan, otherwise they tend to burn. Alternatively, with a lot of recipes that require oil, or a low calorie spray you could try a simple drop of water, it saves the pan issue as well as keeping the oils & fats at bay.

Pre heat your oven to 200C or Gas mark 6


Cut the squash in half length ways, take the top stem off scoop out the seeds, I use an ice cream scoop works great! Score in a criss-cross pattern over the flesh of each one.


Mix together the garlic, lemon juice, chilli flakes, thyme and marjoram, brush this mixture over the top of the flesh.


Place the squash in a baking tray, flesh side up and bake for approximately 30 minutes, or until the flesh is tender.


Whilst the squashes are in the oven prepare the stuffing.


Put the courgette, red pepper, leeks into a separate bowl and spray with low calorie cooking spray. Season and bake for 20-25 minutes or until tender. Add the cherry tomatoes and cook for a further 10 minutes.


Mix the breadcrumbs, flat leaf parsley and grated Pecorino together.


Arrange the roasted vegetables in the squash halves, then scatter with the breadcrumb mixture, bake for a further 10 minutes until golden. Garnish with a little flat leaf parsley. Enjoy
