1 tbsp Mild Curry Powder
1 tsp Tumeric
1 tsp Coriander
1 tsp Ginger
2 Pints Vegetable Stock
To Taste Salt
Pinch Cayenne Pepper
Fresh 4 Sprigs Coriander

Chop the leeks and soften in the low calories cooking spray in a non stick pan. Add the garlic, curry powder and other spices for a few minutes, if this dry's out to quickly just pop in a little of the stock you have already made up!


Put the stock into a pan and add the parsnips and spices /leeks, bring to the boil. Reduce the heat and simmer for about 30 minutes. Remove from the heat and allow to cool for a little while.


Blend the soup in the blender or allow to cool and use a hand blender! until smooth, return to the pan to reheat. If you like hot! add a little dash of tabasco.


Serve into dishes garnish with fresh coriander and a pinch of cayenne pepper. and enjoy.
