250g Cottage Cheese Low fat
1-2 Courgette
1/2 Punnet (Cherry) Tomatoes
1 Yellow Pepper
1 Red Pepper
2 (med) Red Onion
5-8 Trimmed Asparagus

    So I’ve been completely void of slimming world quiches until about 2 months ago, and wow i’ve been missing a tasty filling trick!

    One of the nicest quiches i’ve made is this roasted veg, its super speedy great for filling you up on those SP days and any other. I now keep a quiche in the fridge at all time for snacking, great hot or cold.

    If you like me have very little time, why not pop the veg in to roast while cooking another meal, after all time is sparse at the best of times.

    Chop all Veg, place on a oven tray, spray with Frylight and roast for 40-60 mins at 180 fan, turning occasionally.

    Mix the cottage cheese and eggs and pour into a flan dish.

    Place the roasted vegetables on top of the flan dish, pushing and many into the mixture as possible.

    Place in the oven for 30-40 minutes on 180 fan
