looking for a soup, having been a member of Slimming World on and off for quite a time, I threw this lovely little Pointed Red Pepper Soup together which is Syn Free Also a Speed food. Oh it is so smooth beautiful in colour and taste, great for a light lunch a starter, or just a little snack between meals to fill that little hole!

Place peppers and onion onto a non stick roasting tray, pop into the oven for approximately 30 minutes or until pepper are roasted with a little charring! Meanwhile

Place 800 ml of water into a saucepan and dissolve the stock add the salt and pepper. Leave to cool down.

When the peppers and onion are sufficiently roasted really to your taste, pop the peppers and onion into the stock, blitz in a blender for a minute.

Serve into bowls garnish with a sprig of coriander, perfect.
