Ingredients

2 Leek Peeled & Chopped
Low Calorie Cooking Spray
2 Cloves Garlic Peeled and Crushed
1 tbsp Mild Curry Powder
1 tsp Tumeric
1 tsp Coriander
1 tsp Ginger Ground
Make 2 pts Vegetable Stock
681g Parsnip Peeled and Diced
Salt
Fresh Coriander To Garnish
Pinch Cayenne Pepper

    This Slimming World Inspired curries parsnip soup is lovely and smooth, deliciously  filling, great for any lunch or a starter . We had this as a starter and it worked lovely and you could actually cut the size of your main dinner down!

    Chop the leeks and soften in the low calories cooking spray in a non stick pan. Add the garlic, curry powder and other spices for a few minutes, if this dry's out to quickly just pop in a little of the stock you have already made up!

    Put the stock into a pan and add the parsnips and spices /leeks, bring to the boil. Reduce the heat and simmer for about 45 minutes. Remove from the heat and allow to cool for a little while.

    Blend the soup in the blender or allow to cool and use a hand blender! until smooth, return to the pan to reheat. If you like hot! add a little dash of tabasco.

    Serve into dishes garnish with fresh coriander and a pinch of cayenne pepper. and enjoy.
