- 2 LeeksCleaned & Sliced
- 680 g ParsnipPeeled & Chopped
- 2 Cloves Garlic ClovesPeeled & Crushed
- 1 tbsp Mild Curry Powder
- 1 tsp Tumeric
- 1 tsp Coriander
- 1 tsp Ginger
- 2 Pints Vegetable Stock
- To Taste Salt
- Pinch Cayenne Pepper
- Fresh 4 Sprigs Coriander
Curried Parsnip Soup | Slimming World Inspired | Deliciously Smooth
This curried parsnip soup is delicious, smooth and so filling. Great for lunch, a starter or even for those times when you need to reach for something this will fill that hunger gap. As a starter this syn free soup has proved a massive hit. It’s so filling you could actually cut the size of your main dinner down.
This is one of the recipes that really will fill you up and slim you down!
Chop the leeks and soften in the low calories cooking spray in a non stick pan. Add the garlic, curry powder and other spices for a few minutes, if this dry's out to quickly just pop in a little of the stock you have already made up!
Put the stock into a pan and add the parsnips and spices /leeks, bring to the boil. Reduce the heat and simmer for about 30 minutes. Remove from the heat and allow to cool for a little while.
Blend the soup in the blender or allow to cool and use a hand blender! until smooth, return to the pan to reheat. If you like hot! add a little dash of tabasco.
Serve into dishes garnish with fresh coriander and a pinch of cayenne pepper. and enjoy.
