700g Minced Beef Extra Lean
2 Large Onion Peeled and Roughly Chopped
400g Carrot Peeled and Roughly Chopped
225g Runner Beans Cut into Lengths
700g Potatoes Maris Piper Peeled and Thickly Sliced
1.2L Beef Stock Hot
4 tbsp Tomato Puree
2 x 415g Cans Baked Beans
A Dash Tabasco Sauce
Salt
Black Pepper (Course)
Handful Flat Leaf Parsley Finely Chopped

    Use a large non-stick pan and spray with low calories cooking spray, Stir the mince for 5-8 minutes until browned off.

    Add in the onions, carrots, runner beans, and potatoes and give it a little stir. Then add in the stock and tomato puree. Bring it to the boil. Cover and simmer for approximately 30 minutes or until the vegetables are tender.

    Stir in the baked beans and tabasco sauce and heat through, season and serve.
